Salted Halva Choc Chip Cookies

A grown-up take on sweet nostalgia


If you opened Yiayia’s fridge, right up the top, tucked behind the cheese, you’d always find a block of halva. Sweet, crumbly, and just waiting to be sliced with a little cup of Greek coffee. It’s her quiet indulgence and now, it’s mine too, just baked into something a little different.

I’ve always been a tahini girl. Back in my Miss Bliss days, we’d go through tubs of it weekly, for hummus, dressings, even smoothies. But after closing the cafe, I started experimenting with tahini in sweet recipe and that’s when the magic really started.

Tahini adds a deep, nutty richness that balances out the sugar, almost like peanut butter but more refined. It brings this subtle bitterness and earthiness that cuts through the sweetness, giving these cookies layers: toasty, slightly savoury, and beautifully complex. Paired with halva, dark choc chips, white chocolate, and a pinch of salt… you get a cookie that feels nostalgic and elevated all at once.

What is Halva?

Halva is a traditional sweet confection made primarily from tahini (sesame seed paste) and sugar, resulting in a dense, crumbly texture with a rich, nutty flavour. Originating from the Middle East and Mediterranean regions, it's a staple in many cultures, including Greek and Cypriot cuisines. Variations often include additions like pistachios, almonds, or cocoa, enhancing its flavor profile. In Greek households, halva is commonly enjoyed during fasting periods and is a beloved treat with coffee or tea.

Salted Halva Choc Chip Cookies

Makes: 10-12 cookies
Prep Time: 10 minutes (plus 1 hour min for refrigeration)
Cooking time: 12-15 minutes

Ingredients:

  • 170g flour

  • 150g brown sugar

  • 1 egg

  • 1 tsp vanilla paste

  • Pinch salt

  • 100g unsalted butter

  • 50g dark chocolate, chopped into small pieces 

  • 50 white chocolate, chopped into small pieces

  • 60g halva, crumbled

  • 100g tahini

  • 1tsp baking powder 

Method:

  1. In a double boiler (or a heatproof bowl set over a pot of simmering water), gently melt the butter until completely melted. Make sure the bowl doesn’t touch the water. Once melted, remove from heat and set aside to slightly cool.

  2. Combine the sugar into the butter and whisk till completely combined.

  3. Then add in the tahini and egg. Whisk well till it thickens and becomes a caramel type of consistency.

  4. Fold in the flour, baking power, and salt.

  5. Add in 3/4 of the chocolate and halva. Gentle mix it in.

  6. Cover the cookie dough and place in the fridge for minimum 1 hour.

  7. Preheat oven to 170 degrees Celsius, and line a tray with baking paper.

  8. Portion the cookies into 30-40g balls and slightly flatten (push in some extra pieces of chocolate or halva on the top)

  9. Cook for 12-15 minutes till golden.

  10. Allow to cool before devouring!
