Whipped Ricotta Toast: That reminds you of Pulgia
A Taste of Pulgia at Home
If you ever get the chance to visit Puglia, I hope you try fresh ricotta at least once in your lifetime. For me, it’s one of the things I fall in love with year after year when hosting my food, culture & slow travel retreats here. Right now, I’m writing this from the Masseria where we’re staying, and this recipe is inspired by my current breakfasts – simple, fresh, and full of soul.
Whipped ricotta toast is one of those dishes you don’t realise is so easy, yet feels like it belongs on a restaurant menu. The secret is in the texture: blend fresh ricotta with a little sour cream or Greek yoghurt until perfectly smooth, then season with flaky salt, a drizzle of olive oil, and a touch of lemon zest. You can make it sweet with honey or keep it neutral and layer on seasonal toppings.
Here in Puglia, my mornings start with crusty local bread, creamy whipped ricotta, and whatever the Masseria garden offers – maybe ripe figs, roasted tomatoes, or fragrant herbs. At home, you can bring a little of that magic to your own table.
Little Tips:
Ricotta quality matters – for the best result, use the freshest ricotta you can find.
Make ahead – whipped ricotta can be stored in an airtight container in the fridge for up to 3 days.
Topping tip – roast cherry tomatoes or mushrooms at 180°C (350°F) with olive oil, salt, and pepper for 10–15 minutes until soft and jammy.
Whipped Ricotta Toast
Serves: 4
Prep Time: 5 minutes
Cook Time: 10 minutes
Ingredients:
2 cups ricotta cheese
1 tbsp olive oil
1/2 tsp salt
2 tbsp greek yogurt or sour cream
To Serve:
Crust sourdough bread
Your choice of:
Jammy roasted cherry tomatoes
Strawberries, thyme & honey
Roasted balsamic mushrooms
Method:
Add ricotta, olive oil, and greek yogurt (or sourcream) to a food processor or blender.
Blend for 1-2 minutes until smooth, light and fluffy.
Toast your bread until golden.
Spread a generous layer of whipped ricotta over the toast.
Top with your chosen combination, savoury roasted tomatoes, sweet strawberries with thyme and honey, or earthy balsamic mushrooms..
Drizzle with extra olive oil or honey before serving if desired.
