Soft Matcha Cookies With Fresh Strawberries and White Chocolate


Matcha Hype?

If you are a fan of matcha or just curious about the hype, these soft chewy Matcha, Strawberry & White Chocolate Cookies will not disappoint. I saw the hype about matcha everywhere and wanted to test it out myself. You know when you keep seeing something everywhere and you think “okay… maybe in need to try this”? That was me with matcha; it was all over my TikTok, Pinterest, and Instagram. Also, whilst I love the aesthetic of a matcha latte, I have always been more of a cookie person, so instead of drinking it, I decided to bake with it.

Fresh Strawberries

While making this recipe, I prefer using fresh strawberries as I thoroughly enjoy the texture it adds to the cookies. To balance the earthiness of the matcha, I folded in chunks of white chocolate and fresh strawberries; it’s a perfect combination. While making the dough, I intentionally kept the cookie texture a little more cakey. I wanted something soft but not too dense and light enough to let the flavours shine. The texture and cooking time was intentional to keep the integrity of the matcha and protect its flavor while baking.

*When using fresh or frozen strawberries, I recommend only keeping them for a maximum of 2 days. But if you use freeze-dried strawberries, they can last up to a week in an airtight container.

As someone who wanted to know what the matcha hype was all about, I definitely prefer the cookie form and I hope you guys try it out and enjoy it too!

 

Matcha, Strawberry, White Chocolate Cookies

Makes: 10-12 Serves
Prep Time: 5 minutes
Cooking time: 12-15 minutes

Ingredients:

  • 170g flour

  • 200g flour

  • 1 tsp baking powder

  • 10g matcha

  • Salt

  • 150g butter

  • 130g brown sugar

  • 1 egg

  • 1 tsp vanilla paste

  • 60g white chocolate (chopped)

  • 80g strawberries (chopped)


Method:

Preheat oven to 170°c

1. Melt the butter in a small pot over low heat until full melted. Set aside to cool slightly

2. In a large mixing bowl combine the melted butter, sugar, egg and vanilla paste. Whisk together until smooth and well combined

3. In a separate bowl, which together the flour and baking powder. Then sift the matcha powder directly over the flour mixture and mix until dry ingredients are combined.

4. Add the dry ingredients to the wet mixture and gently golf until a soft dough forms

5. Fold in the chopped strawberries and white chocolate chunks until evenly distributed throughout the dough

6. Using a cookie scoop or spoon, portion the dough onto a lined baking tray, leaving space between each cookie

7. Bake at 170°c for 12-15minutes

8. Take out of oven, let cool slightly, and ENJOY!
