A Weeknight Favourite

Steak is one of my favorite weeknight dinners. It’s quick, easy and delectable when you do it properly. Over the past year, I’ve been really committed to learning how to cook steak properly, and while I’m no professional chef, I can confidently say I’ve semi nailed it! From blooming my steak to using the oven to get the perfectly cooked steak, I’ve learned that steak doesn’t have to be intimidating. This meal gives you that restaurant satisfaction without the stress.

One of my latest flavour obsessions is cowboy Butter. It’s traditionally a rich, garlicky, slightly compound butter served with grilled meats. But I wanted to make it feel a little fresher, so I added some extra herbs, a bit of citrus zest, and toned up the heat to suit my weeknight cravings. The result? These Green Cowboy Butter Steak Bites—buttery, juicy, and packed with flavour.

How to Serve:

This is one of those recipes you’ll want to keep in your back pocket because it works with everything. Here are some suggestions:

  • My personal fave my Parmesan & Roasted Garlic Mash Potato

  • Rice or quinoa: Add some grilled vegetables and you’ve got a protein-packed bowl that’s great for meal prep too

  • In a wrap or sandwich: Leftovers? Tuck them into a tortilla or toasted sourdough with your choice of filling for a quick lunch

  • As a part appetiser: Serve them on toothpicks with a side of leftover cowboy butter for dipping. Trust me.. they’ll disappear fast.

You relly can’t go wrong with how you enjoy these. I love how flexible they are and how they can shift from casual solo dinner to a crowd-pleaser at your next dinner party.

Green Cowboy Butter Steak Bites

Serves: 2-3
Cook Time: 20 minutes

Ingredients:

Green Cowboy Butter:

  • 100g unsalted butter

  • 1 clove garlic, finely grated

  • Zest of 1 lemon + 1tsp juice

  • 1tsp dijon mustard

  • 1tbsp smoked paprika

  • 1/2tsp chili flakes (or aleppo for milder heat)

  • 1tbsp finely chopped parsley

  • 1tbsp finely chopped chives or spring onion

  • Salt + pepper to taste

  • 1tbsp finely chopped coriander (optional)

Steak:

  • 2 ribeye steaks (or flank/sirloin), room temp

  • Olive Oil

  • Salt

Method:

  1. Melt butter on low heat until just bubbling

  2. Stir in all remaining ingredients and whisk until combined

  3. Set aside at room temp while you prep the rest

  4. Prepare the steak: Cut into bite-sized pieces, around 2cm cubed

  5. Season steaks generously with salt

  6. Heat a stainless steel or cast iron pan until very hot

  7. Sear steaks 2-3min per side (this depends on thickness) until golden and medium-rare

To serve: Serve on a bed of my Parmesan & Garlic potato with the Green Cowboy Butter genereously drizzled on top
