How to make a Delicious Roasted Garlic Greek Cheese Toastie

From Bappou’s Breakfast Plate to My Kitchen

Every single morning, my bappou (grandpa) would sit down to the the same breakfast; kafalograviera cheese, olives and breadsticks. As a kid, I wasn’t fond of the cheese but every since he passed away the food became a memory. It’s something my yiayia always kept in the fridge, I started to grow to love it, the saltiness, boldness and most importantly reminded me of him.

Kefalograviera

Kefalograviera is not a quiet cheese; it is the kind that just shows up and steals the show. It’s bold, salty, and just the right amount of sharp, with a slightly nutty, buttery undertone that lingers in the best way. It’s made from sheep’s milk (sometimes blended with goat’s), giving it that full-bodied richness you don’t get from your usual supermarket cheddar.

The Perfect Pairing

So when developing the Dunk, Drop, Top Soup Series, I knew I had to find the perfect pairing for my Mediterranean Tomato Soup. I wanted something that had a deep, nostalgic flavour and that’s how this toasite grilled to golden perfection came to life. The soup is rich and smoky but the saltiness and sharpness of the cheese cuts through in the best way. The sharp, salty bite of the kaflograviera and the spread of roasted garlic make every bite feel indulgent.

 

Roasted Garlic Greek Cheese Toastie

Makes: 2 Serves
Prep Time: 10 minutes
Cooking time: 50 minutes

Ingredients:

4 slices of sourdough (preffered bread)

1 garlic bud

1 cup cheddar

1 cup Kefalograviera

3 tbsp olive oil

Butter

Method:

Roasted Garlic:

1. Preheat oven to 180°C

2. Slice the top off a whole head of garlic (just enough to expose the top of the cloves)

3. Place garlic in a small oven-safe dish, then drizzle with olive oil and sprinkle with a pinch of salt

4. Cover or wrap with foil, then roast for 40-45 minutes until cloves are soft, golden and caramlised.

5. Let cool for 10 minutes, then press the bottom of the garlic head to pop the soft cloves out

6. Mash into a spread (confit)and add salt to meet your preference

Toastie:
1. Spread the garlic: Use garlic confit and spread generously on the inside of each bread slice

2. Add the cheese: Mix your favourite melty cheeses together (ike kefalgraviera and cheddar) and pile onto two slices of bread

3. Assemble: top with the other slices of bread to make your sandwiches, and butter the outside with butter

4. Toast it up: Place a pan over medium heat. Add the sandwich into the pan toasting for 3-4 minutes on each side, pressing gently with a spatula for that crispy edge.
