Creamy Tuscan Chicken
Makes 6 serves
Protein or serve 130g-150g raw beef
Ingredients
900g chicken thighs or breasts, cut into large pieces
Olive oil
Salt and cracked black pepper
Sauce
1 onion or 2 shallots, finely chopped
4 cloves garlic, minced
1 tbsp tomato paste
¼ cup sun-dried tomatoes, drained and chopped
1 cup chicken stock
1 cup thickened cream
Zest and juice of ½ lemon
1 tsp dried oregano or Italian herbs
½ tsp chilli flakes (optional)
To Finish
2 cups baby spinach
Extra cracked black pepper
Method
Brown the chicken
Season the chicken with salt and pepper. Heat olive oil in a large pan and brown the chicken on both sides until golden. Remove and set aside.Build the base
In the same pan, add a little more olive oil if needed. Cook the onion until soft.Add flavour
Add garlic and cook until fragrant. Stir in the tomato paste and sun-dried tomatoes and cook for 1 minute to deepen the flavour.Make the sauce
Add chicken stock, cream, lemon zest, oregano, and chilli flakes (if using). Stir well and bring to a gentle simmer.Simmer gently
Return the chicken to the pan. Cover and simmer on low for 12–15 minutes, until the chicken is cooked through and tender.Finish with spinach
Stir through the spinach until just wilted. Adjust seasoning with salt, pepper, and lemon juice.Cool & portion
Remove from heat and allow to cool completely before portioning into containers.

Freezer Instructions
Portion chicken with sauce into 6 containers
Freeze once fully cooled
Store for up to 3 months
Defrosting & Reheating
Defrost overnight in the fridge and reheat gently
Or reheat straight from frozen on low heat
Add a splash of stock if needed to loosen the sauce
