Crispy Chicken with Slaw

SERVES 4

Ingredients

4 chicken thighs
¼-½ cabbage, finely sliced
3 Tbsp Gevity bone broth sauce (great guts mayo)
1/2 Tbsp Dijon mustard
¼ cup fresh parsley, finely chopped
½ lemon, juice & zest
splash Tabasco
1 tbsp capers (incl. liquid)
½ cup flour
2 tsp smoked paprika
2 eggs
1 cup panko crumbs
Parmesan cheese
Salt & pepper to taste

Method

Start by prepping your chicken.
Place the flour and paprika on a plate and combine, then the panko crumbs on another plate and in a bowl whisk the 2 eggs.

Coat the chicken by placing it in the flour mixture, then the egg and finally the panko crumbs. Once each thigh is coated, place in the air fryer at 200 degrees for 20 minutes. The cooking time will vary depending on the thickness of your chicken.

For the slaw, combine the Gevity RX bone broth sauce, fresh herbs, mustard, Tabasco, capers, zest & juice from lemon. Mix well. Add 3-5 tablespoons of water to bring to a silky consistency that will coat the cabbage. Season with salt & pepper.

Combine the dressing and the slaw and set aside.

Serve the cooked chicken topped with slaw and a generous amount of freshly grated parmesan cheese.
